ThisBaked Blueberry French Toast is simple to prepare & is perfect to feed a hungry crowd.I love that you can quickly whisk together the eggs, milk, maple & cinnamon & soak your bread. Top with blueberries. Spread out the ingredients on a sheet pan and Voila! in 30 minutes have a delicious homemade meal…
I had no patience to soak the bread over night in the egg batter. I wanted french toast at the very moment I thought about it.
Not sure how it would turn out different if you did soak it longer.
Typically recipes tell you to use day old bread & soak it overnight.Well in this case my bread was fresh & it wanted some quick love.
Frozen blueberries makes this recipe accessible any time of year.
If you have large crowds to feed this recipe will allow you to spend time with your guests.
It’s great for sleepovers too. A pat of butter & maple syrup makes everything oh so perfect!
Dig in & enjoy!

Marla,
I like crispy edges on my French toast (the better to soak in butter and syrup) and I appreciate how the whole slice, not just the tops, gets crisped in this version.
Thanks!Reply

I love the idea of this baked french toast (not the normal baked french toast casserole) but what a great way to make a lot of french toast at once. And adding blueberries makes this breakfast look so amazing! I wish I was eating it right now!

I love doing a baked French toast and have a fav. recipe I always use, but my blueberry bushes are putting off so good this year, I knew I needed to find a few good berry recipes to use and when I found this one, I just knew it would be a winner. Since we love breakfast for dinner, they are in the oven right now!!

WOW was this simple, fast and amazing! The taste was like you slaved over the stove flipping and all..I topped my with some left over razzberries just as good with any fruit I would suppose. This comes out soft not dry like I was expecting..this is a keeper for our family!
