I have first discovered Oat Fiber when I started baking with Potato Fiber, which is very similar, but not available in the US. Ordered it and have realized that this particular fiber is really something we need in our kitchen.

I have made our Keto Farmers Bread and Soup Noodles with Potato fiber, which could be easily replaced by Oat fiber. I have also made Keto Fiber Noodles, where you do have a choice of adding spinach or turmeric for additional colors and flavors.

I have even added Fiber into the Fathead dough instead of Almond flour and to my surprise got the best ever dough to work with and developed perfect Fiber Tortillas.

They also eat much smaller portions and stop eating when they are full.
They eat more courses in smaller portions where Pasta is only one of them.
The rest is everything we know from Mediterranean food. Lots of fresh vegetables and protein.

The whole of Europe is built in a way, where you have to walk a lot to get from one place to the next and using a car on a daily basis is very rare.

But let us stop talking and comparing.

How To Make Homemade Low Carb Fettuccine Noodles

Kitchen Gadgets Needed:

Ingredients Needed

STEP BY STEP INSTRUCTIONS FOR MAKING THE BEST LOW CARB FETTUCCINE NOODLES

First Step: Prepare Ingredients

Prepare all of the ingredients.

If you do not have Oat Fiber, you can replace it with Potato Fiber or Bamboo Fiber.

With Bamboo Fiber add 1 Tbsp extra as this fiber is very light in volume.

Second Step: All Keto Pasta Ingredients into the jar

Add all of the ingredients into your Blender Jar, be it Magic Bullet or any blender you have at home.

Third Step: Blend all ingredients together

Blend all of the ingredients together until all are fully combined.

Fourth Step: Pour onto the sheet

Pour onto the Silicone Sheet with edges or a baking sheet covered with Parchment Paper.

Try to pour only the amount to be enough to clever the whole surface. Otherwise, your pasta will be a bit thick

Fifth Step: Spread on the baking sheet and bake

Using a silicone spatula or any spatula, gently spread all of the mixtures to cover all of the gaps.

If you have blended the mixture a bit longer like me, you might see some bubbles formed. You can gently try and bang the baking sheet against the table to get rid of most of the bubbles. I have not done that, unfortunately.

Place into the oven and bake for approximately 8 minutes

Sixth Step: Peel the Silicone Sheet

Once the sheet is baked, place it onto the fresh parchment paper facing the Silicone sheet down.

Gently peel the silicone sheet or parchment paper from the baked Noodles sheet.

Seventh Step: Option 1 – Hand Pasta Roller

The following steps are depending what way are you planning to cut the noodles.

You can either use Hand Pasta Roller. You can also cut the sheet with Pizza Roller or roll the whole sheet and cut with a knife.

Eighth Step: Option 2 – Pasta Machine

If you do have a pasta machine, cut the sheet into the size, that fits and prepare the best ever Low Carb Fettuccine Noodles.

  • 3 Eggs
  • 1 Tbsp Oat Fiber
  • Salt – Optional

  • Prepare all of the ingredients and preheat the oven to 150 C or 300F
